Lower esophagus/ stomach discomfort. Docs are unsure what it is...

hello all. I'm a 25 year old Male and last fall I was sitting down to dinner with my wife and I was eating steak tips and fries. I tried ripping a piece of steak with my teeth and tongue a d ended up swallowing a large piece of steak and it got stuck in my lower esophagus. I tried burping, tried coke, tried butter and nothing worked. everything I drank I drooled out. I ended up driving myself to the hospital and they put me to sleep and used a little camera on a tube and pushed the steak into my stomach. the doc said I had a hiatal hernia when I woke up. 4 weeks later I went back for an upper gi test with biopsy and they looked at my stomach and esophagus and got 13 biopsies. they said there's no signs of hernia a d all biopsy were normal and said I just swallowed to big of a piece. ever since then I've had heartburn, gas, burping , feeling like food stuck in my throat..ect..... I was put on omeprazole 20 mg, then upped to 40 mg then I was fine for about 4 months. then I got a really upset stomach and read to much omeprazole isn't good because it reduces to much stomach acid and you need a certain amount. I ended up quitting the omeprazole all together. more often then not I get esophageal discomfort after eating. I feel full quick. if I eat greasy food I get BAD acid reflux. sometimes I regurgitate food. sometimes I feel like there's phlegm stuck in my throat, I cough and phlegm sometimes comes up, constantly clearing my throat. the only way to get rid of the feeling of food stuck in my throat is to either forcefully burp or make myself puke. I know maki g yourself puke or burp isn't good but that's all that brings relief. pepto doesnt do much. here's a little about my past. I was a tow truck driver for 4.5 years, just recently getting done. I was always over worked and never got good sleep and ate McDonalds all the time. my diet was horrible, I was constantly angry and stressed out. my health is the reason I got done. I also drank 3-4 red bulls a day, sodas and rarely had anything good. I've cut way back on my caffeine and prefer to drink Sprite or 7up but even then the carbonation bothers me and gives me acid reflux. My question is, has anyone else had this? what's your diagnosis? Gastroenterology says no hernia and every is normal. what should I do. I'm nervous to go to the docs now with covid floating around. I recently started taking D-limonene, a natural pill thing to help boost esophageal and stomach health, reduce acid reflux and symptoms and cleanse your liver. what's your opinion?
